What a great combo of flavors in this new summer salad. Best served chilled. I used my mandoline to slice the watermelon radish, one cup snow peas, one cup fresh whole green beans, 1 cup hulled and sliced strawberries. Easy and super delicious! My new favorite.
I just boiled the green beans and snow peas together for 3 minutes in salted water, drained and allowed to cool. Cut and hulled the fresh strawberries, sliced the watermelon radish and Voila ready to rock. I made a lemon vinaigrette light dressing to add over the salad.

Hey Kat-when you go to the produce market or Farmers Market look for the watermelon Radish it is in a class by itself. That’s the thin round discs in the pic. Glad you like the combinations! xo Cheryl

so its not radishes and watermelon….I haven’t seen any radish watermelons here, but I will double check next time out…thanks for clarifying that…LOL

Sure no problem-not many people are super familiar with them but they’re delicious. Of course if not available to you can sub sliced watermelon, small red radishes sliced too Kat. Here in Florida we have such a variety due in part to the influx of people from all over the world visiting long term-like 3-6 months a year so they have expanded our food groups to include many different items. Its fun to try out new things and I am one to constantly create, tweak recipes. Woo-Hoo my friend. xx

Love this salad, I have a special thing for watermelon radishes. They are wonderful and your combination of vegetables and strawberries is delicious.

Lovely salad, made it the other day. I didn’t have snow peas so used green beans (haricot vert). I am still waiting for the good strawberries to appear at the farmers market but the berries I got were pretty good. Delicious and fresh and crisp and spring like YUM.
