Cheese & Olive & Pepper Warm Baked Dip

Delicious Dip for any get together. We love this with crackers, or chips. 1/4 cup sliced black olives, 2 tablespoons Kalamata Olives, pitted sliced, 3 tablespoons green olive with pimentos sliced, 1/4 cup diced bell pepper, 1/4 cup light cream, 1-1/4 cup Pepper Jack Cheese, 1/4 cup mozzarella. In a non stick baking dish add olives and bell peppers, stir to mix, add light cream and stir, combine both cheeses and spread across entire dish in a single layer. Place into a hot 400 F oven and bake 10 minutes or until lightly browned.

Serve with your favorite chips, crackers. Enjoy!

Zucchini (Zoodles) with Apples and Walnuts

Zoodles such a fun, delicious, easy dish. We love this both sweet and savory. Today, I am sharing my newest sweet rendition. I hope you’ll enjoy!

2 medium zucchini-made into zoodles (with your spiralizer) add into a bowl and microwave 3 minutes on high (zucchini has a high water content), drain well. Add to a baking dish or serving dish, add 1/2 cup pure Apple juice, one teaspoon cinnamon, one apple peeled, sliced, 1/4 cup chopped walnuts. Stir well and cover, refrigerate at least 30 minutes before serving in bowls. Add whipped cream if desired.
