Chicken Nuggets with a Dijon Honey Dipping Sauce

Yum-we love homemade chicken nuggets with white meat chicken breasts 2 boneless/skinless cut in large chunks, saute in some butter for 4 minutes. Remove from heat and allow to cool down. Add crushed almonds and panko on a plate and roll partially cooked chicken nuggets coat well. Add to a non stick baking sheet pan and place into a hot 400 F oven and bake 20 minutes.

For the Dipping sauce: 3 tablespoons honey, 1/4 cup Dijon mustard, 3 tablespoons yogurt, stir well and refrigerate until nuggets have baked.

Apple-Bacon and Spinach Salad

I loveeeeeeeeeeeeeeee spinach! 8 ounces fresh baby spinach rinse well and dry. 2 slices cooked Applewood bacon cut into pieces (save the grease from bacon), one apple of your choice sliced (add 1/4 teaspoon lemon juice sweetened concentrate to eliminate browning of fruit), add 1/4 cup pure apple juice to the bacon grease, dash of vinegar and reduce, add a dash or two of white pepper, stir until combined. Drizzle over salad when ready to serve.

Delicious!

Honey-Pineapple Grilled Ribs

Makes a great appetizer! 2 pounds small ribs, fresh pineapple wedges, one 5 ounce can crushed pineapples in natural juices, 1/4 teaspoon ginger, 1/2 teaspoon cinnamon, 1/4 cup Pure Honey. In a small saucepan add pineapples and juices, ginger and cinnamon, honey and mix well cook on low heat until combined and heated through. Pour mixture through a mesh sieve and discard pineapple flesh. Coat each rib with the glaze and place on the grill, continue to grill and baste with the glaze, grill 15 minutes.

Serve with fresh pineapple wedges!

Sirloin Burger with Baked Onion Straws

Scrumptious grilled burger using sirloin ground Beef. One onion sliced thin, coat in flour (drizzle with Olive Oil, S & P, to taste) and pop into the oven until golden and crispy. Use your favorite Hamburger Roll any condiments you love (cheese, lettuce, tomato, mayonnaise, mustard, ketchup, etc.). Makes a great lunch or weekend meal.

I usually serve this with potato salad or cole slaw. Use whatever sides you enjoy!

Burger Meat and Cheese Buns

These are a favorite on weekends. One dozen buns (of your choice) I use a yeast roll from my local bakery. One pound Ground Beef, garlic clove minced, one teaspoon onion powder, pinch of black pepper. Saute ground beef breaking it up as it cooks, drain excess grease and set aside. Carefully cut open a slit in the bun spoon in some cheese (your favorite) and hamburger meat and that’s all there is to these.

Simple and flavorful! They freeze nicely too!

Baked Cinnamon Plantains with fresh raspberry sauce

We love plantains baked with a hint of cinnamon and accompanied with a fresh warm raspberry sauce. YUM! Slice several plantains, add into a bowl with a squirt of honey (or two) and a few dashes of cinnamon, 1/4 cup melted unsalted butter. Mix all ingredients and place onto a non stick rimmed baking sheet pan and pop into a hot 425 oven for 15-18 minutes. While they bake add 1 cup fresh raspberries into a small saucepan, with two tablespoons of granulated sugar on medium heat, cook until fruit breaks down and pour through a mesh sieve.

Remove baked plantains onto a plate, pour sauce in ramekins and enjoy!

12 Minute-Taco Soup!

Quick Taco Soup cooks in 12 minutes! Great lunch or light supper year round. 16 ounces ground beef, 2 tablespoons taco mix, 10 can tomato sauce, 1/2 cup vegetable stock (low sodium), 1/4  cup cooked corn kernels, 1/4 cup small cooked black beans (optional). 1 cup shredded cheese, serve with tortilla chips.

In a skillet break-up and brown ground beef, drain excess grease, transfer to a lidded pot with taco seasoning mix, tomato sauce, veggie stock, stir well add corn, beans, if using, add lid and cook on medium high heat (stir during cooking time-7 minutes). Ladle into soup bowls add cheese and chips (on the side). Quick, easy and flavorful!
