Oriental Warm Noodles

Easiest dish to put together with great flavors. 8 ounces Angel Hair Pasta, 1/2 cup creamy peanut butter, 3 tablespoons low sodium Soy Sauce, 1 teaspoon red pepper flakes, 2 green onions diced, one small carrot shredded.

Cook pasta per instructions, drain and place in a bowl, add soy sauce, red pepper flakes, toss, add diced onions, carrots, toss again. If using creamy peanut butter (can use crunchy) warm in microwave one minute, stir well and add into the pasta slowly, tossing as you add.

Serve warm and enjoy!

Makes a great lunch or early supper.

Ham & Pineapple Loaf

So you are not a fan of Turkey? Not a problem try this Ham & Pineapple Loaf Baked and super delicious. You can make this with leftover Ham from Thanksgiving or Christmas. In a food processor add cubed ham (about 3 cups), 2 tablespoons sweet relish, pinch of white pepper, juices from canned pineapple rings. Pinch of nutmeg, run processor until smooth. Transfer to a large mixing bowl, add two eggs, and with clean hands mix together. Form a round loaf.

Add into a round casserole (non stick) baking dish, garnish the top with cut pineapple rings (from a 5 ounce can). Cover and bake 20 minutes @ 375 F. Garnish with a cherry.

Serve with scalloped potatoes and side vegetable dish.

Makes a great meal! I always make several loaves after Thanksgiving with the leftover Ham!

Sweet Potato Mash with Bacon

Oh my these sweet potatoes are a winner whether for your Holiday Table or anytime. I use 4-5 large sweet potatoes, prick with a fork and layer between paper towels in your microwave, cook 12-14 minutes or until tender. Remove from microwave, cut in half and scoop out flesh into a bowl, mash with a potato master or two forks. Add 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 2 tablespoon light brown sugar, 2 tablespoons melted butter and fold to combine. Add cut crispy cooked bacon and you are ready to transfer to a serving bowl and dig in.

These are so scrumptious and easy to make.

Turkey Roasted to Perfection!

What’s Thanksgiving without Turkey? Although I cook big on that special Day a few Turkeys are baked. I have made so many different varieties through the years this one is a juicy, favorite! I marinate a 15-18 pound Turkey with olive oil, black pepper, salt, cumin, cut bacon pieces, onion powder, garlic powder in a large plastic bag. I marinate it overnight in the refrigerator. Coat the outside of turkey with melted butter, and place into a large roasting pan, cover with foil set oven temp. to 350 F and bake away. After a few hours the house smells so good and everyone is getting hungry! At the half way baking point I baste with melted butter and cut up bacon, recover with foil and let it roast.

It is important to let the Turkey rest before carving. With this flavorful Turkey are so many side dishes, all the favorites of family and friends.

Delicious Baked Beans with Bacon & Cashews

One can 15-ounce butter beans, drained, one can 15- ounce baked beans, one can 15.5 ounce light kidney beans, 1/4 cup ketchup, squirt of brown mustard, 2 tablespoons brown sugar, one half diced finely shallot, one minced clove garlic, 4 cooked crispy bacon slices cut, 1/4 cup cashew halves.

In a stock pot (lidded) add beans, ketchup, mustard, brown sugar, shallot, garlic, on low heat, stir well, cover and cook on low heat 30 minutes, add bacon and cashews, stir and serve in individual bowls.

So delicious and easy!

Apple~Cranberry Green Salad

Delicious Salad. Bibb Lettuce, Apples, Cranberries, Pecans or walnut clusters, apple cider dressing. 2 apples (your choice) cut, dried cranberries, any greens you like. Add all ingredients into a large mixing bowl.

For the dressing: 1/4 (scant) cup apple cider, 3 heaping tablespoons canola oil, s & p, 1/2 lemon (juice only), mix well.

Add dressing over salad, toss gently, serve in pretty bowls and enjoy! (optional: add any cheese if desired).

Super flavorful and refreshing!
