Jumbo Beef Patties with Onion Gravy

The males in this family love beef! I made very thick large beef patties and place them in a baking dish, smothered in sauteed onions (Vidalia) and gravy, seasonings, cover the dish with aluminum foil and baked @ 375 F for 35 minutes. Along with them I served mashed potatoes and broccoli. Easy meal and everyone seemed very happy!

Breakfast Sandwiches

Pre-making breakfast sandwiches are so economical and fun to make and freeze. My family loves egg, sausage and cheese. You can make, egg, bacon and cheese just as easily, if preferred. I use grands biscuits, american or cheddar cheese slices, a good pork sausage.

I wrap them well before freezing them. In the morning they are a snap to re-heat. The night before I take some out of the freezer and into the refrigerator, then wrap in a paper towel and microwave 30-45 seconds-Done and ready to eat!

Try making some to freeze life will be easier in the long run!

Clustered homemade granola with fresh fruit and Yogurt.

Delicious for breakfast/Brunch/Snack. I almost always have homemade granola made. The base is Instant Oats, honey, nuts. It goes with almost any fruit and yogurt dish. I used fresh blackberries, blueberries and strawberries all in season (can use frozen, thaw first and cut up) and reasonably priced.

Just add your favorite Yogurt in a bowl, add granola, fresh fruit and enjoy!

Fruit Salsa with Homemade Cinnamon Sugar Chips

This is such a fun dish and a great palate cleanser. Fresh fruits in Florida are readily available year round. You can use canned, fresh, frozen fruits to put this together very easily. I use watermelon chunks diced, kiwi diced, peaches diced, cantaloupe diced, pineapple diced, strawberries, blueberries, finely diced red onion, lime or lemon juice, dash of honey, use your favorites!

I butter both sides of the flour tortillas, cut into triangles, add cinnamon and sugar onto both sides and bake until crispy. Easy!

Maple Bacon Mini Meat Loaves

These individual baked meat loaves can be frozen for quick weeknight meal. I use 2 pounds Lean Ground Beef, one small onion diced finely, 2 cloves of garlic minced, black pepper to taste, 2 beaten large eggs, 2 cups seasoned bread crumbs, 8 slices bacon (cut in half), 3 tablespoons maple syrup.

Mix ground beef, onion, garlic, eggs, bread crumbs, pepper in a large mixing bowl, form mini meatloaves and place on rimmed baking sheet pans, add 2 half slices of bacon to each loaf, brush on maple syrup. Bake @ 400 F for 45 minutes.

We love these with cheddar mashed potatoes and green beans!

Oriental Warm Noodles

Easiest dish to put together with great flavors. 8 ounces Angel Hair Pasta, 1/2 cup creamy peanut butter, 3 tablespoons low sodium Soy Sauce, 1 teaspoon red pepper flakes, 2 green onions diced, one small carrot shredded.

Cook pasta per instructions, drain and place in a bowl, add soy sauce, red pepper flakes, toss, add diced onions, carrots, toss again. If using creamy peanut butter (can use crunchy) warm in microwave one minute, stir well and add into the pasta slowly, tossing as you add.

Serve warm and enjoy!

Makes a great lunch or early supper.

Ham & Pineapple Loaf

So you are not a fan of Turkey? Not a problem try this Ham & Pineapple Loaf Baked and super delicious. You can make this with leftover Ham from Thanksgiving or Christmas. In a food processor add cubed ham (about 3 cups), 2 tablespoons sweet relish, pinch of white pepper, juices from canned pineapple rings. Pinch of nutmeg, run processor until smooth. Transfer to a large mixing bowl, add two eggs, and with clean hands mix together. Form a round loaf.

Add into a round casserole (non stick) baking dish, garnish the top with cut pineapple rings (from a 5 ounce can). Cover and bake 20 minutes @ 375 F. Garnish with a cherry.

Serve with scalloped potatoes and side vegetable dish.

Makes a great meal! I always make several loaves after Thanksgiving with the leftover Ham!

Sweet Potato Mash with Bacon

Oh my these sweet potatoes are a winner whether for your Holiday Table or anytime. I use 4-5 large sweet potatoes, prick with a fork and layer between paper towels in your microwave, cook 12-14 minutes or until tender. Remove from microwave, cut in half and scoop out flesh into a bowl, mash with a potato master or two forks. Add 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, 2 tablespoon light brown sugar, 2 tablespoons melted butter and fold to combine. Add cut crispy cooked bacon and you are ready to transfer to a serving bowl and dig in.

These are so scrumptious and easy to make.

Turkey Roasted to Perfection!

What’s Thanksgiving without Turkey? Although I cook big on that special Day a few Turkeys are baked. I have made so many different varieties through the years this one is a juicy, favorite! I marinate a 15-18 pound Turkey with olive oil, black pepper, salt, cumin, cut bacon pieces, onion powder, garlic powder in a large plastic bag. I marinate it overnight in the refrigerator. Coat the outside of turkey with melted butter, and place into a large roasting pan, cover with foil set oven temp. to 350 F and bake away. After a few hours the house smells so good and everyone is getting hungry! At the half way baking point I baste with melted butter and cut up bacon, recover with foil and let it roast.

It is important to let the Turkey rest before carving. With this flavorful Turkey are so many side dishes, all the favorites of family and friends.

Delicious Baked Beans with Bacon & Cashews

One can 15-ounce butter beans, drained, one can 15- ounce baked beans, one can 15.5 ounce light kidney beans, 1/4 cup ketchup, squirt of brown mustard, 2 tablespoons brown sugar, one half diced finely shallot, one minced clove garlic, 4 cooked crispy bacon slices cut, 1/4 cup cashew halves.

In a stock pot (lidded) add beans, ketchup, mustard, brown sugar, shallot, garlic, on low heat, stir well, cover and cook on low heat 30 minutes, add bacon and cashews, stir and serve in individual bowls.

So delicious and easy!

Apple~Cranberry Green Salad

Delicious Salad. Bibb Lettuce, Apples, Cranberries, Pecans or walnut clusters, apple cider dressing. 2 apples (your choice) cut, dried cranberries, any greens you like. Add all ingredients into a large mixing bowl.

For the dressing: 1/4 (scant) cup apple cider, 3 heaping tablespoons canola oil, s & p, 1/2 lemon (juice only), mix well.

Add dressing over salad, toss gently, serve in pretty bowls and enjoy! (optional: add any cheese if desired).

Super flavorful and refreshing!

Stuffed Shells

Love these stuffed shells! I use a 16 ounce box of large pasta shells, cook al dente in salted boiling water, rinse, set aside to cool down. Add 8 ounces sirloin ground beef to a skillet, one finely diced onion, one half bell pepper, diced. One teaspoon garlic salt, dash or two of black pepper, cook ground beef until browned, remove grease, add one teaspoon oregano, one teaspoon basil, stir well, add 22 ounces tomato/or marinara sauce on low heat. Cook until combine and well heated through. Allow to cool slightly.

Using a tablespoon or wooden spoon fill each pasta shell and place in a baking dish. Add grated (one cup) parmesan cheese, 1-1/2 cup grated mozzarella cheese, cover with foil and place into a 400 F oven for 15 minutes, remove foil, shut off heat and let residual oven heat finish melting the cheeses.

Serve with a green salad and garlic bread.

Fruit Stuffed Baked Acorn Squash

Delicious Baked Fruit Filled Acorn Squash for your holiday table! So easy and scrumptious. One 15.5 ounce can of fruit cocktail, one 4 ounce bag dried cranberries, one 5.5 ounce crushed pineapples, 2 tablespoon honey, 2 tablespoon brown sugar. Cut acorns in half remove flesh and seeds, set aside.

In a mixing bowl add fruit cocktail, cranberries, pineapple, honey and brown sugar, stir well, transfer to a small saucepan and cook until incorporated, remove from heat. Fill each acorn squash half and cover with aluminum foil and bake @ 400 F for 40 minutes.

Serve and enjoy!

Broccoli Parmesan Fettuccine

I love this pasta and veggie dish. 8 ounces Fettuccine Pasta boiled as per package instructions (add a pinch or two of salt to the boiling water), drain, add back into the pot with 1-1/2 cups Parmesan grated cheese, s & p, to taste, garlic powder, cooked broccoli florets, toss gently and serve.

Super easy and ah so flavorful.

Serve with garlic toast and enjoy!

Scrumptious Apple Salad

Apples are everywhere here in Georgia! So I whipped up this apple salad. Using 8 apples (I used 4 McIntosh and 4 Red Delicious) cut into cubes I used two lemons for their juice to cover the apple cubes, one tablespoon honey, 1/4 cup chopped pecans, 1/4 cup golden raisins, 1/2 cup whipping cream, stirred well refrigerated and served about one hour later.

Yummy! It was enjoyed by all.
