Summer Salad-Arugula-Spinach-Blackberry-Strawberry & Feta Cheese

Arugula and Spinach with Blackberries, strawberries, Feta Cheese! New summer salad! 8 ounces Arugula, rinsed, dried, chopped coarsely, baby spinach, rinsed, dried, coarsely chopped, 1/2 cup Blackberries (Fresh), rinsed, 1/4 cup Fresh strawberries, hulled, rinsed, cut up, 1/4 cup Feta Cheese Crumbles. Salt and Black Pepper, if desired, one tablespoon Pure Honey. Use any salad dressing you prefer.

Add all ingredients into a large mixing bowl, toss gently, refrigerate until ready to add dressing and serve.

Sweet Baked Beans~Slow Cooked

Great side dish with pork, hamburgers on a weekend! One 22 ounce can Bush original baked beans, 3 tablespoon pure honey, one 5.5 ounce can pineapple chunks and natural juices, 1/4 cup light brown sugar. That’s it 4 ingredients.

Add all ingredients into the slow cooker on low heat, stir well as you add each ingredients, place lid on and cook 2-3 hours. Transfer to a serving crock.

That’s it-easy, flavorful and fun!

Bow Tie Pasta and Meat Sauce with a Corn Bread Topping

My family LOVES this easy dish. 8 ounces Bow Tie Pasta cooked al dente, rinse set aside. 8 ounces Ground Beef, 1/2 onion, grated, 20 ounce tomato sauce/marinara sauce, one teaspoon garlic salt, one teaspoon black pepper, saute ground beef crumble up as it cooks, remove excess grease add tomato sauce and seasonings, cook 10 minutes. In a mixing bowl add 3/4 cup corn meal, 1/2 cup self rising flour, pinch of salt, one beaten egg, 2 tablespoons melted butter (do not over-mix batter). Using a non stick baking dish add bow tie pasta and ground beef/tomato sauce mixture, stir gently, even out top with an offset spatula, add gently and carefully the corn bread batter, spread it out as evenly as possible. Pop into a 400 F oven and bake 20 minutes or until golden brown and corn bread is baked.

Plate and serve. We love this with a side garden salad. Yumified.

Creamy Jalapeno Cilantro Mint Dip

A terrific creamy dip using warmed homemade tortilla chips! Yum! 8 ounces softened cream cheese, 2 jalapeno peppers (remove stem and keep as many seeds for heat level as desired), 1 tablespoon finely chopped fresh mint, 1/2 teaspoon fresh lime juice, a few cilantro leaves chopped finely (optional). In a mixing bowl add all ingredients, stirring the entire time. Refrigerate 30 minutes before serving. Garnish with fresh mint leaves.

We love this cold dip with warmed fresh tortilla chips!

Cheddar~Jalapeno Skillet Corn Bread

Savory and delicious skillet corn bread. 1-1/4 cups Corn meal, 1 cup self-rising flour, dash of iodized salt, 2 tablespoons canola oil, one beaten large egg, one jalapeno pepper (cut stem) sliced, 1 cup shredded cheddar cheese-divided use.

Pre Heat Oven 400 F, spray a 10″ skillet with your favorite cooking spray set aside. In a mixing bowl add all ingredients slowly (do not over-mix batter), reserve 1/4 cup of shredded cheddar cheese for the top of corn bread before baking. Transfer to prepared skillet, add cheddar cheese (reserve) on top evenly, place in the hot oven on the middle rack for 22-24 minutes or until golden brown. Cut into triangle wedges and enjoy!

Center Cut Pork Chops with a creamy Mustard Mushroom Sauce

Delicious Flavors in these Center Cut Chops. Four center cut chops season with salt and black pepper and place in a non stick baking dish with 1 cup vegetable stock, cover with aluminum foil and place into a 400 F oven for 30 minutes. Remove from oven and transfer to a cast iron skillet (Or any skillet), add 3 tablespoons sweet cream butter, 1 teaspoon corn starch, one teaspoon cumin, one teaspoon onion powder, one teaspoon garlic powder, 1/4 cup light cream, 1/2 cup sliced cook white button mushrooms, 2 tablespoons brown grainy mustard (or your favorite mustard), cover with a lid on low heat and simmer together for 10 minutes.

It will be creamy, flavorful and ready to eat! Serve with your favorite side dishes. We love homemade applesauce, and cooked honey carrots with these chops.

Raspberry~Chipotle BBQ Wings

Raspberry-Chipotle BBQ sauce is so flavorful with wings. Easy to prepare for any party, picnic, get together. You’ll need 2 cups fresh or frozen raspberries, 2 chipotle peppers in adobo sauce-chopped finely, one lemon for juice, 2 tablespoons granulated sugar, 1/4 cup honey BBQ sauce (pre-made), 1/2 teaspoon black pepper.

In a saucepan add raspberries, chopped chipotle peppers and lemon juice, granulated sugar on medium high heat, stir as fruit breaks down, cook 5-6 minutes. Remove from heat. Using a mesh sieve over a bowl pour raspberries mixture through the sieve using a wooden spoon allow sauce to drip (discard seeds), return mixture to the saucepan and add honey BBQ sauce, black pepper, stir to combine. Cook on medium heat 3-4 minutes. In a 8″ x 8″ baking dish add 3-4 pounds of chicken wings, pour mixture over the wings and place in a 400 F oven-cover with aluminum foil and bake 25 minutes, remove foil and bake additional 5 minutes.

Plate and serve with plenty of napkins!!!
