“Light Fare” Tuna~Tomato~Pea~Pasta

This is one delicious and easy lunch (or light supper) option I just love. One 5.5 ounce can white albacore tuna (drain water) add into a bowl mix with a fork to break tuna apart. 6 ounce weight thin spaghetti add to salted boiling water and cook as per box instructions, drain and add into tuna bowl. 1/2 teaspoon black pepper, fresh chopped parsley, one Roma tomato cut into small dice, 1/2 cup cooked peas. Toss gently (tuna will continue to break up). Add 1/2 lemon zest and juice and toss gently. Salt and black pepper, to taste if necessary.

Plate and serve! Delicious-I love it! Enjoy…

Serve warm or room temperature.

Refrigerate any leftovers which are great served cold. Remember to toss again!

Chicken Tenders in a Lemon~Saffron Sauce

Great flavor profile, quick cooking and easy clean up! 16 ounces Chicken Tenders (not breaded-Fresh), one whole lemon (save zest for garnishing if desired) juice, salt and black pepper, to taste, drizzling of olive oil or canola oil, 1/4 cup chicken broth, 2 tablespoons light cream, 2 pinches saffron (use this sparingly-a little goes a long way).

In a saute pan add oil, chicken tenders on medium heat and cook until juices run clear (about 6-8 minutes), add chicken broth, cream, lemon juice, stir gently, add saffron and cover pan and cook on medium/low heat 15 minutes.

We love this dish with brown or wild rice and a side vegetable or dinner salad. Delicious my friends…

Apple noodle/zoodle Dessert

Using your spiralizer (first peel if your spiralizer does not do it for you as mine will) 3 apples (of your choice) add apple noodles/zoodles into a large mixing bowl. One teaspoon cinnamon, dash of nutmeg, one cup pure apple juice, 2 tablespoons light brown sugar, 4 individual graham crackers crumbles, 2 tablespoons melted butter.

In a non stick baking dish (I use a 9″ x 12″ x 3″) add apple juice, cinnamon, nutmeg, stir with a spatula, apple zoodles/noodles, stir gently. In a small bowl add light brown sugar, graham cracker crumbles, melted butter using a fork mix together and sprinkle over the entire dish. Cover with aluminum foil and place into a 350 F hot oven and bake 10 minutes, remove foil and continue baking 5-6 minutes longer. Remove from oven and carefully serve. Add whipped cream topping or frozen vanilla yogurt, vanilla bean ice cream and enjoy! We even added warmed caramel drizzle over the top of vanilla bean ice cream-Yumified!

Easy and a fun dessert!

Easiest and Fun~Tortilla Pizzas

Friday night is always pizza night at our home. The gang wanted to try this several weeks ago and I am just getting around to posting it for YOU! They had such fun creating their very own personalized pizzas. I use the large wheat and flour tortillas, my own homemade marinara sauce, spices, two cheeses (mozzarella, parmesan, grated) pepperoni, cooked ground sausage, pre-cooked bacon pieces, roasted mushroom slices, onions caramelized.

They made some great combinations and with the pre heated oven and several pizza stones they baked toasty and had the gooey cheese and toppings. They take just minutes in a 500 F oven to bake, using a pizza cutter to make 4 triangles, serve and enjoy!

Less crust and more toppings, sounds like an absolute fun and winning evening and it was!

Cucumber~Yogurt~Salad

This is an easy refreshing salad to serve with any entrée. One cup Greek Yogurt, one lemon for zest and juice, 1/2 teaspoon black pepper, 1/4 teaspoon Greek Oregano, 1/4 teaspoon onion powder, sliced cucumber (either English cucumber or regular-I always peel the outer skin and use a mandoline to cut thin slices).

In a mixing bowl add Greek Yogurt, lemon zest and juice, pepper, oregano, onion powder and stir well to mix. Refrigerate while you cut the cucumber thinly as you would like. Add to mixture and gently combine. Cover with plastic wrap and refrigerate 30 minutes (or longer) before serving.

Just delicious!

Skillet Chicken Cutlet Parmigiana

A great main course, serve with your choice of pasta. 2 whole boneless/skinless Chicken Breasts cut in half  (horizontally) carefully and placed between two pieces of waxed paper or plastic wrap, using a mallet or rolling pin flatten breasts out to a cutlet (4 cutlets). 1-1/2 cups Marinara or Tomato sauce, one cup Grated Parmesan, one cup shredded mozzarella, salt and black pepper to taste. garnish with fresh basil ribbons or parsley.

In a skillet add a bit of canola or olive oil on medium  heat add cutlets and salt and black pepper to taste, saute 4-5 minutes per side. Remove from heat. Add marinara or tomato sauce into skillet, add parmesan cheese on top, sprinkle shredded mozzarella on top and cover with aluminum foil and place into a 375 F oven for 15 minutes, remove foil and bake 5-6 more minutes to brown up the cheese. Garnish with basil or parsley.

Serve with a side of pasta, or mixed green salad. Remember the bread and butter too!

Caramelized Onion~Mushroom~Bacon Warm Dip

Crazy good dip! One large white onion sliced, 2 tablespoons butter, salt and black pepper, to taste, 1/2 cup button mushrooms (clean, sliced), 4 strips bacon cooked crispy and cut into pieces, 4 ounces softened cream cheese, 1/4 cup grated Monterey Jack Cheese.

In a saute pan add butter, sliced onions and saute 10 minutes on medium high heat, add button mushrooms, salt and black pepper and continue cooking additional 8 minutes. Remove from heat. Once slightly cooled transfer to a mixing bowl, add crispy bacon pieces, softened cream cheese and stir with a sturdy spatula to well combine. Transfer to a non stick baking dish and smooth out the top, add grated cheese evenly to the top and pop into a 400 F oven for 6-8 minutes.

Serve warm with chips, bread slices, veggies.
