The Western~Waffle For One or Two!

Get your waffle iron hot and ready for this delicious waffle! In a mixing bowl add all ingredients for waffle batter, add diced bell pepper (a handful will do), diced cooked bacon or cubed small ham chunks (or crumbled cooked sausage), salt to taste, if desired, fold into batter (do not over-mix batter). Cook your waffle to your desired doneness and plate.

We love sweet and savory so you can make a maplechipotle syrup. Just cut up one chipotle in adobo sauce pepper finely, 1/4 scant cup of Good syrup, stir well, warm in the microwave and drizzle over the western waffle. It is so delicious!

Great for breakfast, lunch or dinner time!

Caramelized Onion~Sausage Cheese Dip

Perfect dip anytime! Use with pita chips, toasted bread strips, crackers. One white onion sliced finely, 1 tablespoon canola oil, 2 tablespoons butter, crumbled 4 ounces ground sausage, one half cup Pepper Jack Cheese shredded, one half cup smoked mozzarella (or regular mozzarella Cheese-shredded), one teaspoon cumin, one half teaspoon sage.

In a skillet add butter, oil on medium high heat add sliced onions and saute 12 minutes, add cumin, sage, crumbled ground sausage and cook until sausage is no longer pink, reduce heat to medium cook additional 10 minutes until onions are caramelized. Transfer to a prepared baking dish, spread both cheeses evenly across the top and place into a hot 400 F oven. Bake 10 minutes or until cheese is hot and bubbly.

Serve hot out of the oven. Delicious!

Note: You can sub ground sausage for pepperoni, chorizo bites, shredded chicken or have no meat in this recipe!

 

Crock-Pot~Pork Steaks & Apples

Pork steaks are an economical, tasty, shoulder cut and when cooked in the slow cooker/crock pot they are so tender! Its a great meal for an easy, flavorful supper while the crock pot does the work you are free to do other things!

4-6 ounce Pork Steaks, salt and black pepper, to taste, one teaspoon onion powder, one teaspoon garlic powder, one teaspoon ground sage, one teaspoon ground cinnamon, pinch of nutmeg, one teaspoon cumin, one teaspoon allspice (add all spices in a ramekin and mix) spread on each pork steak. Add a few tablespoons of canola oil in a large saute pan (I do two at a time) sear each side a few minutes on medium high heat. Add them into the slow cooker/crockpot with 1-1/2 cups vegetable broth/stock (low sodium). Place the lid on and cook 2 hours on medium heat. Add 3 apples peeled, cored and quartered into the slow cooker/crock pot after the two hours and set on low and cook 1-2 hours longer.

It is a flavorful combination.

We love these served with creamy mashed potatoes and baked beans!

Seasoned Curly~Sweet Potato~Baked Fries

What a fun, delicious side dish to any main course. We love them…

Using 2 whole Sweet potatoes peeled and using a spiralizer cut your curly fries. Add into a mixing bowl with 2 tablespoons melted butter, 1 teaspoon cinnamon, a few pinches nutmeg, 1 tablespoon honey, one tablespoon light brown sugar, using clean hands mix to coat curly fries.

Set oven to 400 F transfer seasoned coated curly fries on a non stick baking sheet pan spread out in a single layer and bake 20 minutes. Yes, it is that simple and so delicious!

Shrimp~Tostadas

Great appetizer or lunch option! 8 ounce weight large Shrimp (deveined, shells and tail off) place shrimp in a large mixing bowl, add one teaspoon smoked paprika, 1/2 teaspoon old bay seasoning, 1/2 teaspoon black pepper, 1/2 teaspoon garlic salt and mix well. Using several small round flour tortillas toast evenly in saute buttered pan. 

I grill the shrimp 2-3 minutes (per side) and place several grilled shrimp on top of toasted tortilla, add any toppings you like. I usually make a salsa (mild flavored), Pico de Gallo, Sour cream, green diced onions, grated cheese blend, lemon wedges, anything will go with these. Even a raspberry chili sauce I make!!!

Mixed Fresh Fruit~Mid Day Bowl

Loving fruits and vegetables as we do I will often make this mid morning for myself! Easy and so flavorful. 1 cup Plain Yogurt, handful of fresh raspberries (rinsed), handful of fresh blueberries (rinsed), one kiwi sliced, add ingredients into a bowl, add a handful of homemade granola on top. I usually chill for 30 minutes or so.

It is so good, nutritious and easy to prepare! Hope you get on the fruit and veggies wagon with me!

A fun anytime ~ Fruit & Cheese Appetizer!

I love fruit as you all know. I make a scrumptious easy lunch (great as an appetizer too) using two nectarines, cut in half (remove pits) coat in honey, add one slice of your favorite cheese on top of each half, place in a baking dish. Preheat oven to 400 F, cover dish with aluminum foil and bake 18 minutes.

These are so good on a bed of mixed greens and serve with lemon or lime wedges!
