This is one delicious and easy lunch (or light supper) option I just love. One 5.5 ounce can white albacore tuna (drain water) add into a bowl mix with a fork to break tuna apart. 6 ounce weight thin spaghetti add to salted boiling water and cook as per box instructions, drain and add into tuna bowl. 1/2 teaspoon black pepper, fresh chopped parsley, one Roma tomato cut into small dice, 1/2 cup cooked peas. Toss gently (tuna will continue to break up). Add 1/2 lemon zest and juice and toss gently. Salt and black pepper, to taste if necessary.
Plate and serve! Delicious-I love it! Enjoy…
Serve warm or room temperature.
Refrigerate any leftovers which are great served cold. Remember to toss again!
