Quick Taco Soup cooks in 12 minutes! Great lunch or light supper year round. 16 ounces ground beef, 2 tablespoons taco mix, 10 can tomato sauce, 1/2 cup vegetable stock (low sodium), 1/4 cup cooked corn kernels, 1/4 cup small cooked black beans (optional). 1 cup shredded cheese, serve with tortilla chips.
In a skillet break-up and brown ground beef, drain excess grease, transfer to a lidded pot with taco seasoning mix, tomato sauce, veggie stock, stir well add corn, beans, if using, add lid and cook on medium high heat (stir during cooking time-7 minutes). Ladle into soup bowls add cheese and chips (on the side). Quick, easy and flavorful!

You can add any veg/sour cream, avocado, etc. Beans of your choice. Freezes well also! xo
