I selected a variety of chicken pieces, breasts, thighs and decided to use this Orange-Honey~Lemon Pepper Glaze and let me say it was a huge hit!
For the glaze I used 1 orange for the juice added into a mixing bowl, one lemon sliced and juice, 2 tablespoons Pure Honey, 1-1/2 teaspoon cracked black pepper, pinch of sea salt, 1 tablespoon Olive Oil, 1 teaspoon white distilled vinegar, I added fresh parsley chopped finely, add one red onion sliced thick, stir well.
Place chicken in a large baking pan, add 1 cup chicken stock (low sodium) and the mixing bowl ingredients (just pour over the chicken pieces). Cover with foil and place in a 375 F oven for 45 minutes, remove foil and shut off oven and let chicken rest in the residual heat for a few minutes.
I served this with brown herbed rice and cranberry sauce.
