Baked Potatoes & Apples

We love these Baked Potatoes & Apples with a Roasted Pork Tenderloin or Eye Round Roast Beef.

Using 3 Yukon Gold Potatoes rinsed well (peel or not-I do peel them), chunk them with a super sharp knife, peel and core 3 of your favorite apples and chunk them as well. Add 1/2 cup apple juice to the bottom of a 9x12x3 baking dish, add several tablespoons of butter, and begin layering potatoes, then apples slices, add salt and black pepper to taste, 2 tablespoons of drizzled Pure Honey, cover with aluminum foil place in a 400 F hot oven and bake 20 minutes, remove foil (add raisins and or pecans, if desired) and bake for another 2-4 minutes until the top is golden brown.

Serve and enjoy!

  2. Great side dish Cheryl! My kids always struggle with potatoes (unless they are fried), but I don’t think they will with this dish. I love the idea of adding apples and honey to potatoes.
