I just adore salads at lunchtime-year round. If you like a peppery flavor and sweet apples you’ll love this quick and scrumptious salad too! 1 cup chopped arugula, 1/2 cup romaine lettuce (chopped), one apple (your choice, peeled, cored, sliced), 1/2 whole lemon zest and juice, handful of cherry tomatoes, several radishes sliced, one tablespoon red wine vinegar, one tablespoon olive oil. Salt and black pepper to taste, if desired.
On a serving plate add all ingredients toss gently and enjoy! I love this salad with some crackers or croutons. Light and refreshing!
