Pineapple~Rice Bake

Super side dish with Pork or Ham! We just love it. Cook 1 cup of your favorite rice to al dente. I will usually use fresh cored pineapple slices for this dish but you can use canned pineapple rings or chunks in natural juices. 1/2 whole lemon for juice and zest, 1/4 cup light brown sugar, dash of cinnamon and nutmeg, 1/4 cup pineapple juice, fresh chopped parsley. Simple ingredients with huge flavors.

In a mixing bowl add pineapple rings or chunks, natural juices and 1/4 cup of pineapple juice, lemon zest and juice, light brown sugar, cinnamon, nutmeg, add cooked rice, parsley and stir well to incorporate. Transfer to a baking dish, smooth out the top and bake 12 minutes @ 375 F.

We love this with Baked Ham!
