Its a wonderful meal for a Weekend! 5 Pound boneless Pork Tenderloin Roast, salt and black pepper, to taste, add 1/4 cup Pomegranate Molasses and rub into the entire Tenderloin, add to a baking dish with 1-1/2 cup vegetable stock (low sodium) cover with aluminum foil and bake @ 375 F for 70 minutes, remove foil to crisp up the loin (for a few minutes). Remove from oven to rest and redistribute juices.
Incredibly flavorful Pork Roast, slice and serve. I love to make loaded baked potatoes, applesauce and a side salad with this Roasted Pork Tenderloin meal.
Great leftovers for sandwiches!
Hope you’ll enjoy!

Sounds wonderful Cheryl, love using pomegranate molasses with pork, made a ham once from Food52 recipes with a glaze using it. Must try this tenderloin,
