From the Butcher/Meat Market I get several pounds of Lamb Stew Meat, marinate in olive oil, black pepper and salt, to taste. Using metal skewers (you can use wooden ones but soak in water first) get ready to cut some veggies. I use bell pepper, onion, cherry tomatoes, lamb stew meat cut into bite sized pieces, very simple. We also grill these on the outside grill you can bake them or use an inside grill or griddle pan. Cook/grill to your desired doneness. Thread a piece of lamb, add onion, bell pepper, whole cherry tomato, repeat on skewers.
For the Yogurt minty sauce in a small bowl add 1/2 cup Greek Yogurt, 1/8 teaspoon Mint Extract and stir well, add black pepper, 1 tablespoon Pure Honey and stir well. Garnish with fresh mint finely chopped.
