This combination is so delicious. I use a sourdough bread for these sandwiches, butter both sides of each slice of your bread choice (depending on how many sandwiches you are making). In a baking sheet pan add 1 cup sliced mushrooms (or your choice), 1 cup baby Kale chopped, 2 tablespoons Olive Oil, salt and black pepper to taste. Pop into a 425 F oven for 12-14 minutes. Remove from oven.
I use a baby swiss cheese (you can use your favorite) add butter to a skillet, grill or griddle pan lay first slice of buttered bread (buttered side down) add several slices of cheese and scoop some roasted mushrooms and kale on top, add the other slice of bread (buttered side up) and cook 3-4 minutes (when toasted) flip to the other side, until the cheese melts!
Cut the sandwich in half, add a pickle on the side and enjoy!
