Great snack any time! One 15 ounce can crushed pineapples drained (reserve juices for another use-I use for smoothies!). Add pineapples into a bowl, add 3/4 cup sweetened coconut flakes stir to mix. I use a pie plate filled with confectioners sugar and using cleans hands coat them (your hands with the sugar), scoop some pineapple/coconut mixture, roll into a ball then roll into confectioners sugar. Set each one on a clean platter.
Repeat until you use all the mixture. Refrigerate covered until ready to serve.
