This is such a delicious appetizer for a group! We just love them. One head fresh cauliflower (cored, cut florets), 2 eggs beaten, salt and black pepper to taste, fresh chopped parsley, 1/2 cup Panko (or plain Bread Crumbs), 1-1/4 cups Aged White Cheddar Cheese.
In a food processor (or can use a blender) add florets, eggs, salt, black pepper, panko and pulse several times, run processor only long enough to combine. Transfer ingredients into a large mixing bowl add cheddar cheese and using a sturdy spatula mix well to combine. Using a scoop round out mini balls and place in a 24 count mini muffin tin wells (I use non stick). Pre heat Oven 375 F. Place mini muffin tins into the oven and bake 12 minutes.
Serve with any sauce you like. I make a sour cream/chopped chives and hot sauce mixture to use as a dipping sauce.
