Kettle Chip~Nachos!

My family loves this snack and I try to make it for them at least once a week during movie time. Using a large bag of Kettle Chips, lay them in a large skillet in a single layer and set aside.

I use several cheeses to melt slowly (1/2 cups of each Fontina and Cheddar, shredded) and add 1/4 cup milk, black pepper, 1 teaspoon paprika and simmer until thickened and creamy. Cut up a few Roma tomatoes in a small dice, an onion diced finely or scallions, spread melted hot cheese across the top of kettle chips, add tomatoes, onions and pop into a 400 F oven for 6-8 minutes. Add dollops of sour cream once removed from oven and cooled a bit.
