The Chicken & Chip Layered Casserole

This is a fun dish especially for a quick night supper. You’ll need 3 cups of cooked chicken shredded, one 10-ounce can cream of chicken soup, 1/4 cup whole milk, 2 cups grated Mexican cheese blend, 1-15 ounce bag Cool Ranch Doritos chips, 1/2 cup sour cream, 2 stalks scallions diced finely, one tomato diced, one 15.5 ounce can black beans drained and rinsed.

In a 9x12x3 baking dish add soup and whole milk and mix well to combine, add shredded chicken evenly in the baking dish (yes, it’ll fall into the soup and that’s fine), add cool ranch Doritos across the top of chicken, add diced scallions, diced tomatoes, black beans all evenly across the baking dish. Add shredded Mexican blend cheese, cover with aluminum foil and place into a hot 375 F oven and bake 15 minutes remove foil and baked an additional 5 minutes to brown up the cheese!

Cut in single serving size squares, dollop with sour cream and Enjoy!
