This works well as an appetizer for a get together or just a pre-dinner snack! We love them. You’ll need a loaf of good French or Italian bread, cut off ends (about 2″) slice the loaf. In a mixing bowl add 1/2 cup ricotta cheese, one tablespoon lemon zest, few pinches of oregano, black pepper and stir to mix. I like to use grape, or cherry tomatoes rinsed then halved (you can slice heirloom tomatoes thinly as well), we like smoked mozzarella cheese sliced (you can use regular ball of mozzarella cheese-sliced). Whole fresh basil leaves (nice bunch!) rinse gently, dry on paper towels.
Set oven to broil and using two non stick baking sheet pans, coat each bread slice with the Ricotta mixture evenly, add several tomatoes, and place sheet pans under the broiler (I leave the oven door ajar to monitor-do not burn the bread!!! LOL). The tomatoes will blister a bit (Yum). Remove from oven after 2-3 minutes and garnish with fresh basil and a drizzle of balsamic vinegar, that’s optional! Serve and enjoy!
