A great weekend late night snack or movie night! Using a large cast iron skillet spray it well with your favorite cooking spray and set aside. You’ll need a 16 ounce bag of frozen hash brown potatoes, 2 eggs beaten, salt and black pepper to taste, 1/2 stick melted butter, 1/2 cup grated parmesan cheese, 1 cup grated/shredded mozzarella cheese, 1 cup marinara sauce (warmed). Garnish with basil ribbons or chopped fresh parsley.
In a large mixing bowl add hash brown potatoes, eggs, salt, pepper, melted butter and stir well to combine. Add ingredients into the prepared skillet and using a spatula pat down hash brown mixture. Place into a 400 F oven and bake 20 minutes. Remove from oven and add both cheeses evenly across the top and return to the oven and bake 10 more minutes. Warm marinara sauce to serve on the side. Remove skillet from the oven and using two spatulas carefully loosen and remove hash brown pizza onto a cutting board. Cut into wedges and serve.
Fun and delicious! Garnish with basil ribbons or chopped fresh parsley.
