Whenever I make pulled pork I always keep several cups separate to make these Fajitas for lunch on a weekend. I tend to use small flour tortillas, Frank’s Buffalo Sauce, sliced green onions, sour cream on the side, of course grated cheese (of your choice). You can add any condiments of your liking.
On the stove-top in a large skillet add pulled pork, buffalo sauce (I use a scant quarter cup), green onions, and saute on low heat (covered) for 10 minutes. I warm the flour tortillas in the microwave for 20 second intervals. Load up the tortilla with buffalo pork mixture, add a few dollops of sour cream, cheese and your choice of extra condiments.
These are delicious and fun to make-hope you enjoy!
