Stuffed Bell Pepper~Soup

By golly put on a pot of this and you will definitely think you are eating a stuffed bell pepper! You’ll need 6 ounces pork sausage (ground), 6 ounces ground beef, one bell pepper (remove seeds and stem) diced, one shallot diced finely, salt and black pepper to taste, one cup cooked rice, one can 16 ounces jarred tomato sauce, 1/2 cup beef broth, one teaspoon oregano, one teaspoon basil, one teaspoon parsley.

In a large skillet add ground sausage and ground beef, diced bell pepper, diced shallot, salt and black pepper to taste and saute until tender and meat is no longer pink, drain in a colander and transfer into a soup pot with a lid. Add tomato sauce, beef broth, oregano, basil, parsley, stir well, cook with the lid on 10 minutes on medium low heat, add in cooked rice, stir again well and cook additional 10 minutes covered.

Serve in soup bowls with some grated cheese on top, croutons or crackers, bread sticks and enjoy!
