Using some of that leftover Turkey chop 2 cups of white or dark meat (or both) into small cubes or shred, add to a mixing bowl, add 4 slices of your favorite bread cubed, one egg beaten, salt and black pepper, to taste, 1/2 teaspoon ground sage, parsley and 1 teaspoon thyme, mix well, (you can add finely chopped celery, shallots, onions also to mixture). Transfer to an 8″ x 8″ baking dish (or you can use a 5″x 9″ loaf pan) and smooth out mixture. Add one cup leftover turkey gravy or you can use 1/2 cup chicken stock (low sodium) and 1/2 cup milk mixed together then add to baking dish.
Cover baking dish with aluminum foil, pre heat oven to 375 F once hot, bake dish 20 minutes. Serve with any other leftovers sides from your Thanksgiving dinner! Sweet potatoes, corn, peas, green beans whatever you like!
I make these loaves in aluminum foil pans (5×9) and freeze them! It works out great for a quick supper.

No in have stuffing left have made packages of leftovers and given to a few friends but still have food left. I can only have turkey for so long before I get tired of it.

Yes, I see-that’s why I make this and freeze it-it’ll keep for months! You know me I can not waste any food and will create a recipe using almost anything! Woo Hoo!

I can’t waste food either. This is why turkey is only made once a year. I like it but not every day. Love that your loaf freezes.

Ha-I would tire of it every day as well. I have another easy recipe for tomorrow using some turkey meat up also.

In going to make some soup using the carcass. Will add some of the turkey meat to that. I give away a lot it just doesn’t seem to go away. I love baked ham and can eat the leftovers for days and not tire of it.

Yes I made a spiral ham too, as well as two turkeys. I have a recipe posted on TK for Ham Loaf similar concept to Turkey Loaf, except using pineapples and sweet relish! That’ll be made tomorrow with some of the leftover Ham I have. Always cooking and baking and freezing foods around here. LOL

You have to with such a large family. Just me here and because of that I don’t cook but a couple of times a week and like easy foods with little cooking.

Of course I understand – big difference in my household! Someone is always hungry-LOL…Gosh, I’d be lost only cooking for me? Although, I did that many years ago! You forget though and are in the present day.

This is the best idea I’ve ever seen for leftover turkey Cuzzin. I’m going to give it a try, you can bet on that. I just might add some of my dressing instead of bread crumbs, because I use biscuits and cornbread for the dressing, and onions, celery, sage and the usual suspects for flavoring. That will use up more than just the leftover roaster (didn’t get a turkey this year), it will also use up some of the huge amount of dressing. Hugs. Angie
