Roasted Baby Kale & Fingerlings

This side dish is a favorite and easy to prepare! I get one pound of baby kale from the produce market, and 10-12 fingerling potatoes. I rinse both of them well and dry on paper towels. In a small ramekin I add 1 teaspoon onion powder, 1 teaspoon sea salt, 1-1/2 teaspoon black pepper and mix well. Set aside.

Set oven temperature to 375 F grab a large baking sheet pan and add kale and fingerlings. Drizzle liberally with Extra Virgin Olive Oil, with clean hands mix and toss, add seasonings by sprinkling over the top and place baking sheet pan in the oven. I check after 20 minutes of bake time and toss and return to the oven to bake an additional 20 minutes. We love this combination.

It goes well with chicken, fish, just about any main course meat/fish you may like to pair it with. We usually have baked Fish, or Salmon, with it.
